Guar Gum  are used in many sectors of industries like

Gum is derived from guar seeds or cyamopsis tetragonoloba termed as Guar Gum. Guar Gum can also be termed as guaran. These seeds have high low-shear viscosity as evaluated with other hydrocolloids like (locust bean gum). Guar Gums are effective thickeners and stabilizers. Guar Gum is relatively cost effective as compared to other thickeners and stabilizers along with it being an effective binder, plasticizer and emulsifier. One of the important properties of guar gum, a polysaccharide, is that it is high on galactose and mannose.

The color of guar gum powder is whitish and yellowish consisting of slight odor. Cyamopsis tetragonolobus or Guar Plants endosperm derives Guar Gum. Guar crop is basically a legume (a plant of a pea family) which grows effectively in sandy soils, with rainfall to some extent with lots of sunshine.

India Followed by Pakistan and US is the key producer of Guar Seeds constituting approximately 80% of the over all production. Guar crop grows on semi arid and sub-tropical area harvested between Octobers to November. Guar seed is the combination of three things the germ, endosperm and the husk. Guar seed is basically the legume which regenerates the nitrogen in soil. Green Guar is the source of vegetables and also fed to cattle’s. Guar Gum can also be termed as the best and appropriate substitute for locust bean gum. Guar Gum is extracted from Guar seeds and is grounded transforming it into Guar Gum Powder.

The Guar plant sprouts bean-like pods that are 5-10 cms long and contains 8-10 seeds. Guar seeds are about 3 mm to 5 mm in diameter and are dicotyledonous i.e. they have two endosperm halves. Also known as Guar Splits, the endosperm halves are separated from the germ and hull using a combination of thermal and mechanical processes. Guar Splits are then milled to produce Guar Gum powder.

Properties of Guar Gum

Compatibility with other hydrocolloids

Guar Gum is compatible with most other hydrocolloids and water soluble polymers such as Agar, Arabic, Carrageenan, Karaya, Locust Bean Gum, Pectin, Propylene Glycol Alginate, Sodium Alginate, Tragacanth, Methylcellulose, CMC and Xanthan. It is also compatible with raw starches, most modified starches and many water soluble protein.

Tamarind Kernel Powder is derived from the seed of the tamarind tree, Tamarindus indica, one of the most common trees of southern India. The tamarind fruit is a large flat pod which is 10 to 15 cms in length. It contains tamarind seeds, stringy fibrous matter and an acidic pulp. The seeds are a by-product of the tamarind pulp industry. The seed is flat and of irregular shape, being round ovate or obtusely four sided. The kernel, which makes 70% of the seed is covered by a testa having a rich brown colour.

The seeds are cleaned, decorticated, polished and then milled to obtain regular Tamarind Kernel Powder. In order to obtain Deoiled Tamarind Kernel Powder, the flakes of the polished seeds are subjected to an extraction process that brings down the oil content from 7% to less than 1.25% and are then milled into powder.

Tamarind Kernel Powder (TKP) is a composite mixture which contains :

Galactoxyloglucan which is generally known as tamarind gums are used to form a rigid gel and for thickening, gelling and stabilizing in food.

On heating tamarind kernel powder with water while stirring, it makes a uniform solution. Supreme viscosity is normally acquired after boiling the dispersion for around 20-30 min. It has high yielding viscosity and water absorption capacity over various pH range.
